Sunflower Seed Wild Rice Pilaf
This classic pilaf highlights the Co-op's bulk department offerings.

Ingredients
  • 4 cups chicken or vegetable broth
  • 1 cup wild rice
  • 2 1/4 cups water
  • 2 cups wheat pilaf
  • 1 cup sunflower seeds
  • 1 cup dried cranberries
  • 5 scallions, minced
  • 1/2 cup parsley, chopped
  • 1/2 cup mint, chopped
  • Zest of one orange (optional)
  • 2 tablespoons olive oil
  • Salt & pepper

  • 1 cup wild rice
  • 2 1/4 cups water
  • 2 cups wheat pilaf
  • 1 cup sunflower seeds
  • 1 cup dried cranberries
  • 5 scallions, minced
  • 1/2 cup parsley, chopped
  • 1/2 cup mint, chopped
  • Zest of one orange (optional)
  • 2 tablespoons olive oil
  • Salt & pepper
Instructions
  1. In a medium saucepan, bring broth to a boil and stir in wild rice. Cover, bring back to a boil and reduce to a simmer. Cook for 45-50 minutes, or until rice is tender.
  2. While rice is cooking, bring water to a boil in a second saucepan and stir in wheat pilaf. Cover, bring back to a boil and reduce to a simmer. Cook for 15 minutes, or until pilaf is tender.
  3. Remove from heat, let rest for another 15 minutes, and add to the wild rice. Toss with remaining ingredients.
  4. Serve at room temperature.
