Lemon Garlic Scape Dip

You can either use this as a dip or as more of a sauce for tossing with pasta or cooked vegetables. If using as a dip, start with five scapes, if using as a sauce go more towards ten. This will totally depend on how strong of a garlic flavor you enjoy.

  • 5-10 garlic scapes
  • 1 cup plain Greek yogurt
  • 1/4 cup Parmesan cheese grated
  • 1/2 cup sunflower seeds
  • 4 tbsp olive oil
  • 1 lemon zested and juiced
  • kosher salt

  • 5-10 garlic scapes
  • 1 cup plain Greek yogurt
  • 1/4 cup Parmesan cheese grated
  • 1/2 cup sunflower seeds
  • 4 tbsp olive oil
  • 1 lemon zested and juiced

Instructions
  1. Wash the scapes and trim off any dry or woody ends. Then roughly chop into several pieces.
  2. In a food processor, combine the scapes with the remaining ingredients. Process until smooth. Season with salt, taste, and adjust any of the ingredients to your liking, adding in more scapes if the flavor isn't intense enough for you.
  3. Store in the fridge for up to a week. This makes a good dip for crackers and raw vegetables or used as you would a traditional pesto - with pasta, on sandwiches, mixed into scrambled eggs.
