Guacamole with Tomatillos
Peter McGann, a long-time Rutland CoOp member and former employee, is also a local Mexican food authority. You can find his delicious south-of-the-border fare at the Vermont Farmers' Market in Rutland.

Ingredients
  • 4 ripe avocados peeled and quartered
  • 1/2 white onion finely chopped
  • 4 serrano and jalapeno chiles seeded and finely chopped
  • 1 small bunch cilantro roughly chopped, some stems included
  • 12 tomatillos peeled and pre-cooked until soft
  • kosher salt to taste

  • 12 tomatillos peeled and pre-cooked until soft
  • kosher salt to taste
Instructions
  1. Combine all ingredients in a bowl. Use a large wooden spoon to mash ingredients. Store in a narrow-topped, air-tight container in the coldest part of the refrigerator until serving time. Serve with your choice of tortilla chips.
