Fresh Cranberry Oatmeal

Now’s the time to stock up on fresh cranberries while they’re in season and available. Although we think of them most around Thanksgiving, cranberries have many uses that extend beyond the holidays. Unlike dried cranberries, when using fresh you can control the amount of sugar. Why not simmer some with your oats for this deliciously tart cranberry oatmeal.

Ingredients
  • 2 cups water
  • 1/2 cup fresh cranberries
  • 2 tbsp brown sugar more or less, depending upon your taste
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup rolled oats
  • 1/4 cup chopped, toasted walnuts for topping (optional)
  • milk for serving

Instructions
  1. In a medium pot combine the water, cranberries, brown sugar, cinnamon and salt. Bring to a boil then simmer over medium heat until the cranberries start popping.
  2. Add in the oats and lower the heat to maintain a rapid but gentle simmer. Cook about 10 minutes, stirring occasionally, until liquid is mostly absorbed and the oats are cooked.
  3. Divide the oatmeal between two bowls, top with the walnuts and milk. Serve warm.
