Colcannon

Colcannon is a traditional Irish dish made with potatoes and cabbage. We added in a little bacon and made it even better! Enjoy it as a side dish or as a light dinner.

Ingredients
  • 3 slices bacon
  • 2 lbs red potatoes chopped into 1" pieces
  • 1/2 head cabbage (about 4 cups) roughly chopped
  • 1 yellow onion
  • 1/3 cup milk
  • kosher salt
  • freshly ground black pepper
  • 1 tbsp butter

Instructions
  1. Wash the potatoes and cut into large chunks. Add them to a pot and cover with water by a couple of inches. Generously salt the water and bring to a boil. Cook until tender, about 15 minutes. Strain.
  2. Meanwhile, heat a large pan over medium high heat and add the bacon. Cook until crisp, about 5 minutes, stirring occasionally. Transfer to a paper towel lined plate but keep the pan on the heat with a little bit of the grease. Add the onion to the pan, saute about 5 minutes, then add the cabbage and cook for another 5.
  3. Add the potatoes back to their pot, mash, then mix in the milk. Toss the mashed potatoes with the cooked onion, cabbage and bacon. Season with salt and pepper to your liking and serve with the butter.
