Almond Milk

There are at least a dozen ways to make a non-dairy milk beverage these days. But almond is always a reliable and effortless choice. We like to keep things simple with the addition of just a little salt, maple syrup and vanilla but feel free to flavor, sweeten and season as you like. Then use the almond pulp as a fiber filled addition to your next batch of muffins or other baked good.

  • 1 cup raw almonds
  • 3 1/2 cups filtered water
  • 1 tsp vanilla extract optional
  • t tbsp maple syrup optional
  • 1/4 tsp kosher salt optional

Instructions
  1. Add the almonds to a small pot and cover with water. Bring to a boil then remove from the heat and allow to soak for one to two hours. Afterward, discard the water and rinse the almonds.
  2. Combine the almonds and the 3.5 cups of filtered water in a food processor. Process for three minutes then strain, add in any flavorings and return to the processor and run for another 30 seconds.
