  • 1 lb. carrots
  • 2 tbsp. olive oil
  • 1 pinch salt
  • 1/3 cup orange juice
  • 1/3 cup raisins
  • 2 tbsp. maple syrup
  • 1/4 chopped parsley (optional)

Ingredients
  • 1 lb. carrots
  • 2 tbsp. olive oil
  • 1 pinch salt
  • 1/3 cup orange juice
  • 1/3 cup raisins
  • 2 tbsp. maple syrup
  • 1/4 chopped parsley (optional)
Instructions
  1. Peel and slice the carrots roughly ¼-inch thick.
  2. Place the carrots, oil, salt, orange juice and raisins into a small pan. Bring to a boil over high heat.
  3. Reduce to medium and cover, keeping it at a good simmer. Cook 10-20 minutes, until the liquid is almost absorbed and the carrots are tender but still crisp.
  4. Remove the cover, add the maple syrup, stir and cook another 2 minutes.
  5. Top with the chopped parsley and serve. Can be served hot, warm or at room temperature.
