Citrus Vinaigrette

Exactly how much vinaigrette you end up with will depend on how much juice is in the citrus. Regardless, you should have enough for two large salads. It will keep for at least a week covered at room temperature. Make more than you need now and save yourself time later on.

  • 2 cloves garlic minced
  • 1 medium organic orange
  • 1 medium organic lemon
  • 3/4 cup olive oil
  • 1/2 cup white wine vinegar
  • 1/8 tsp kosher salt
  • freshly ground black pepper

  • 1/2 cup white wine vinegar
  • 1/8 tsp kosher salt

Instructions
  1. Place the minced garlic in a 2 cup sized jar. Zest, then juice, the orange and lemon and add both the zest and juice into the jar.
  2. Pour the oil and vinegar into the jar along with the salt and pepper, to taste.
  3. Put a lid on the jar and shake until well combined. Taste and adjust the seasoning as you like. the ingredients will separate, so just shake again just before using.
